BBQing at its best! – “Love Meat” – “Salad Optional”.

Not since caveman discovered fire and started to burn meat has there been so much excitement around the evolution and the process of BBQing. I thoroughly recommend Cotton Tree Meats BBQ School with Luke, John and Sheep (aka Ryan). The night is a hedonistic journey into the world of all things meat – and as the great protein prophet Luke says, “Salad is optional.”

The Cotton Tree Meats BBQ school was one of the more enjoyable outings I’ve had in many a year. Excellent value, excellent food, excellent drink, excellent company!

These “Bovine Technicians”, are passionate about their craft and impart their knowledge on all things BBQ, meat, and temperature, interlaced with sensational food and a fantastic sense of humour.

If attending, ensure you check your self-esteem and ego at the door, as the team while imparting Cow 101 anatomy demonstrate their knife skills. (Who knew listening about brisket, sirloin and cutting muscle and sinews could be so entertaining and enlightening?)

The boys displayed a variety of cooking techniques, showcased their man BBQ’s (are electric pellets cheating and a real man’s BBQ John ?) while putting their money where the mouth is, by cooking live and providing meat straight to the plate.

The served up Protein fest would defy any hardened Greek with servings of Beef Ribs, Pork Louisanna Ribs, Pulled Pork, Pulled Lamb, Pork belly burn ends and more. While eating, we were also forced to endure Jim Beam shots while drinking beer. Obviously a tough gig.

There was a vast array of rubs and marinades available on the night with Sheep sharing some of the team’s recipes and mixes.

At the end of the night, you walked away with a full stomach, cheerful disposition and armed with the knowledge of the critical temperatures for that perfect BBQ supplemented with your vouchers.

Bovine Technician Acolyte in the making.
